Cape Town Tastes the World: Chefs on Tour Serves Up a Spicy, Delightful Adventure
We recently dove headfirst into a culinary adventure at Time Out Market’s infamous “Chefs on Tour” event. Picture this: a vibrant food hall buzzing with energy, transformed into an intimate fine-dining experience. Now, sprinkle in two superstar chefs from opposite ends of the earth, and you’ve got a recipe for an unforgettable night. This time, the spotlight shone on Chef Paul Toussaint, a Montreal maverick, teaming up with Cape Town’s own culinary legend, Chef John van Zyl. Let’s just say, sparks flew (figuratively, of course – safety first!). Witnessing our local hero go toe-to-toe with a world-renowned chef was electric.

The nine-course tasting menu was a whirlwind of flavors that had our taste buds doing a happy dance. We kicked things off with John’s Salmon Sashimi, a Cape Malay dream with its tangy dressing and pickled onions. It was the perfect way to whet our appetites for what was to come.

Paul’s Tuna Ceviche might not have been our top pick – interesting flavors, for sure, but not quite a crowd-pleaser. But hey, that’s the beauty of these collaborations – pushing culinary boundaries! Now, onto the real star of the show: John’s Prawn Laksa. This dish was a symphony of spice, with perfectly plump dumplings swimming in a fragrant broth. We saw folks practically licking their plates – no judgment here, because SAME.

Paul countered with a fun and flavorful Grilled Kabijou, complete with crushed yam and a delightful coconut bisque. It was a clever fusion of textures and tastes. John elevated the classic lamb roti with his Smoked Lamb Roti. The carrot cumin purée and mint yogurt dressing added a playful twist, making this dish both familiar and exciting. Paul’s Seared Venison Loin was cooked to melt-in-your-mouth perfection, paired with a rich demi-glace and a vibrant butternut squash purée. This guy knows his way around protein!
Both chefs brought their A-game to the dessert round. John’s Lime Posset with apple and lemongrass granita was a refreshing palate cleanser, while Paul’s Pineapple Tart Tatin with coconut ice cream offered a sweet and tropical twist on a classic.

Here’s the verdict: both chefs brought their culinary A-game. But let’s be honest, Chef John kind of stole the show. His dishes were well-balanced, flavorful with a touch of South African flair, and told a captivating story with every bite. That said, Paul’s international influences were a welcome addition, adding a touch of global flair to the evening.
The bottom line? This Chefs on Tour event was a win-win. We devoured mind-blowing food, experienced a true culinary collaboration, and all for a good cause – supporting our local culinary scene. So, next time Chefs on Tour rolls into town, do yourself a favor and grab those tickets. Your taste buds will thank you, we promise!
